Weekend Update

Good Morning!
  While most of you are at work, I'm off today. Lovely way to start a Monday, I know. Don't be too jealous because I'm working straight through the week til next Monday. Sucks, I know! Anyway, while Mac & the pup are sleeping I figured I'd post here before I get up and ready for the day.

Saturday I worked until 3 & then took the bus home. Afterwards Mac wanted to take me out to dinner to celebrate him no longer having car payments (until he decides he wants a new car...my guess it'll only be a few months that he's car payment free lol) So we went to Outback & then decided against that when the wait time was an hour & a half. Everyplace we went had a long wait, so we went to Taco Bell (lol). Afterwards we hit up subway because I HAD to have dessert and wanted cookies so that's what we did. Mac went out with his bff after our little date.I myself had an evening with the internet & the pup.

Yesterday we got up, got dressed and headed into NYC to go to the NY International Auto Show. It's seems to be tradition for us.  We got there around 2 and walked around til 7 (note to self..next time wear sneakers!) then we left in search of food.  Before getting actual food, we stopped at Crumbs & split a cupcake. A chocolate covered Strawberry one to be exact :) We stopped at a little place called salt & pepper . They had pizza, Indian food, Spanish food and other varieties.  We got rice & beans with a beef stew type of meal. It was DELICIOUS. Best $10 Mac spent on me in a while ;) We got our food to go,found a little table outside to eat at & people watched for a bit. We walked around after just to walk off some food and get some roasted nuts from the street venfor. We were home to Sir by 10 and I was in bed by 11:30.

Today we plan on taking the pup to a park that's a few minutes away from the house, so he can run & we can enjoy this lovely 90* Spring Summer day. Pics to follow on that :)

Weekend recap

Hope everyone had a wonderful thanksgiving. Ours was quiet. It was just Mac dad, sir and myself. I cooked way more food than we needed but Mac and I don't need to cook for the next few days.

Friday I worked until 3 and then later I met dad for pizza. Later on Mac and I had a huge fight over something ridiculous. I had a hard time falling asleep so I wound up calling out on Saturday. I woke up not feeling good so it probably worked out for the best.
I wound up at the mall with dad for a few hours and then to outbacks.

Today Mac and I went to chipotle and then met up with dad. We wound up at tgifridays. Mac burnt his hand pretty badly on the appetizer plate so his meal was free. We lounged around and watched tv most of the night and I put up a tiny christmas tree. I may or may not put up another one.

Today we're going to look at a dog friendly apartment down the road from us. I'm hoping it'll be a match for us. Keep us in your thoughts for this place!

What I'm loving Wednesday

This week I'm loving:

Mac even though things have seemed to be a bit off between us lately. Long hours and days at work will do that


That after tomorrow I will be able to listen to Christmas music and not hear Mac complain that it's "too soon" lol


That I will be spending Thanksgiving relaxing at home with Mac & Sir. My dad will probably make an appearance. I have a very simple meal planned. Turkey cutlets, ham, sweet potatoes, a vegetable of sorts, cranberry sauce, biscuits, stuffing, mashed potatoes and of course pumpkin pie dessert.  I'd be lying if I didn't say 90% of the meal is boxed/canned. 


That I survived 10 days of work without a break. This will be only be for a little bit though. There's another 9 day work week in my future!

Fabulous Fall Blog Challenge Day 7

Today's topic is: Fall Recipe's


Cooking is something I love to do & wish I had more time to do it. When you work the late shift like I do, the last thing you want to do is cook at 9 o'clock at night. I try and make several things on my days off and freeze them. So here are some of my favorite Fall recipe


Buffalo Chicken Soup

ingredients:

1/2 yellow onion, chopped
3 stalks celery, chopped
1/4 cup unsalted butter
1/4 cup flour
2 cups milk
1 cup chicken broth, plus extra if needed
4 oz sharp cheddar cheese
2 cups cooked and cubed chicken
1/8 cup Frank's RedHot sauce
1/2 tsp celery salt
1/2 tsp garlic salt
This one is a favorite in our house!

directions:

Saute onions and celery in butter until tender. Stir in flour until smooth. Slowly add milk and broth. Heat and stir on medium until soup starts to thicken. Add remaining ingredients and simmer, stirring occasionally, until cheese has melted.

I also added rice to mine to make it a little more stew-y and less soupy.
